The trick to making these delicious Potato Pancakes is by using Austrian Pumpkinseed oil! The oil adds a flavor that really makes this culinary delight mouthwatering! These potato pancakes are delicious for breakfast or as a side dish for dinner! Great as a snack too!

Serves: 1-2

Ingredients:

• 1-2 medium sized potatoes
• Organic Sea Salt and ground pepper- to taste
• 2 Teaspoon organic sour cream
• 1 teaspoon Austrian Pumpkinseed oil
• 1 teaspoon chopped dill
• 1 teaspoon organic butter
• organic applesauce

Potato pancakes are delicious and easy to make!

Directions:

1. Grate the potatoes and press out the extra liquid.
2. Mix the sour cream, Austrian Pumpkinseed oil, and dill together.
3. Add the mixture to the grated potatoes.
4. In a skillet, combine 2 tablespoons of Austrian Pumpkinseed oil and the butter.
5. Drop a tablespoon of the mixture into the hot skillet spreading out the mixture to form a pancake.
6. Sprinkle with sea salt and pepper and turn so that both sides are golden brown. Repeat with remaining mixture.
7. Serve with applesauce and enjoy!

Loofah is commonly known as an item used for exfoliating the skin. However, there are so many other uses for loofah. It is amazing how people around the world use this incredible plant based sponge in so many different ways.

What is it?

According to Wikipedia, the luffa, loofah, or lufah (from Arabic ????) are tropical and subtropical vines comprising the genus Luffa, the only genus of the subtribe Luffinae of the plant family Cucurbitaceae. The fruit of at least two species, Luffa acutangula and Luffa aegyptiaca (Luffa cylindrica), is grown, harvested before maturity, and eaten as a vegetable, popular in Asia and Africa.

The ripe, dried fruit is also the source of the loofah or plant sponge. Luffas are also used to make the soles of beach sandals.

The seeds combined with the herbs, wild rice and fruit create an intriguing quartet of flavor that really complements the taste of the chicken. By drizzling some of the Austrian Pumpkin oil on the outside of the chicken, all of the flavors combined produce an entrée that is well seasoned, juicy and delectable.

Ingredients:

• One organic free-range chicken
• 1 tablespoon Organic Rosemary or 1 fresh sprig
• 1 tablespoon Organic Thyme
• 6 fresh organic Sage leaves chopped or 2 tablespoons
• 1 small onion, chopped
• 1 small organic apple, diced
• 1 small organic pear, diced
• 1 cup organic wild rice
• 1 cup organic celery, diced
• 1 tablespoon chopped Austrian Pumpkinseeds
• 3 tablespoons Austrian Pumpkin Seed Oil
• Sea salt
• Freshly ground pepper

Directions:

1. Stuffing: Cook the wild rice according to the directions. (As a rule of thumb, for every 1 cup of rice, you use 4 cups of water) tip: for additional flavor, use vegetable stock or chicken stock. Mix the pumpkin seeds, herbs , fruit and rice together and season with salt and pepper.
2. Stuff the cavity of the chicken with half the mixture.
3. Create a pocket between the meat and skin on the breast (beginning at the breast bone) of the chicken.
4. Place the remaining seeds/herbs/fruit/rice mixture into the pocket.
5. Pour the Austrian pumpkinseed oil into the pocket. Return the skin. For additional flavor, drizzle Austrian Pumpkin oil on the skin of the chicken. It will enhance the flavor of the chicken making the skin crunchy but not dry.
6. Bake poultry according to directions for weight.
7. Garnish and serve!

Creating Your “Zen” Moments

When I use JoyUs Mind  I can always relate to how I feel when I am finishing up a yoga session. Whenever I participate in any of what I term “Zen” moments, I usually come away with a more calm and relaxed Mind.

The Little Gold Box

A young man learns what’s most important in life from the guy next door. It had been some time since Jack had seen the old man. College, girls, career, and life itself got in the way. In fact, Jack moved clear across the country in pursuit of his dreams.

There, in the rush of his busy life, Jack had little time to think about the past and often no time to spend with his wife and son. He was working on his future, and nothing could stop him.

Over the phone, his mother told him, “Mr. Belser died last night The funeral is Wednesday.”

Memories flashed through his mind like an old newsreel as he sat quietly remembering his childhood days.

“Jack, did you hear me?”

“Oh, sorry, Mom. Yes, I heard you. It’s been so long since I thought of him. I’m sorry, but I honestly thought he died years ago,” Jack said.

“Well, he didn’t forget you. Every time I saw him he’d ask how you were doing. He’d reminisce about the many days you spent over ‘his side of the fence’ as he put it,” Mom told him.

“I loved that old house he lived in,” Jack said.

“You know, Jack, after your father died, Mr. Belser stepped in to m ake sure you had a man’s influence in your life,” she said

“He’s the one who taught me carpentry,” he said. “I wouldn’t be in this business if it weren’t for him. He spent a lot of time teaching me things he thought were important…Mom, I’ll be there for the funeral,” Jack said.

As busy as he was, he kept his word. Jack caught the next flight to his hometown. Mr. Belser’s funeral was small and uneventful He had no children of his own, and most of his relatives had passed away.

The night before he had to return home, Jack and his Mom stopped by to see the old house next door one more time.

Standing in the doorway, Jack paused for a moment. It was like crossing over into another dimension, a leap through space and time The house was exactly as he remembered. Every step held memories. Every picture, every piece of furniture….Jack stopped suddenly.

“What’s wrong, Jack?” his Mom asked..

“The box is gone,” he said.

“What box?” Mom asked.

“There was a small gold box that he kept locked on top of his desk I must have asked him a thousand times what was inside. All he’d ever tell me was ‘the thing I value most,’” Jack said.

It was gone. Everything about the house was exactly how Jack remembered it, except for the box.. He figured someone from the Belser family had taken it.

“Now I’ll never know what was so valuable to him,” Jack said. “I better get some sleep. I have an early flight home, Mom.”

It had been about two weeks since Mr. Belser died Returning home from work one day Jack discovered a note in his mailbox. “Signature required on a package. No one at home. Please stop by the main post office within the next three days,” the note read.
Early the next day Jack retrieved the package. The small box was old and looked like it had been mailed a hundred years ago. The handwriting was difficult to read, but the return address caught his attention. “Mr. Harold Belser” it read. Jack took the box out to his car and ripped open the package. There inside was the gold box and an envelope. Jack’s hands shook as he read the note inside.

“Upon my death, please forward this box and its contents to Jack Bennett. It’s the thing I valued most in my life.” A small key was taped to the letter. His heart racing, as tears filling his eyes, Jack carefully unlocked the box. There inside he found a beautiful gold pocket watch.

Running his fingers slowly over the finely etched casing, he unlatched the cover. Inside he found these words engraved:

“Jack, Thanks for your time! -Harold Belser.”

“The thing he valued most was…my time”

Jack held the watch for a few minutes, then called his office and cleared his appointments for the next two days. “Why?” Janet, his assistant asked.

“I need some time to spend with my son,” he said.

“Oh, by the way, Janet, thanks for your time!”

Think about this. You may not realize it, but it’s 100% true.

Ever wonder why we do things in two’s? Two shoelaces, two eggs, two shoes to go with the two shoelaces, get a second opinion, two of a kind, two weeks notice, two feet to go with those two shoes, two for the price of one, etc.,etc.

As I was sitting in my garden observing the beauty that surrounded me, I noticed how nature demonstrates this in so many ways.  Whether it is a pair of Summer Whites (moths) or simply pair of birds playing a game of chase as they soar through the sky, two bees gathering nectar or two flowers that are so close, they appear to be twins! (If you listen carefully, you can hear them whisper, “look at me! I’m here too!”)

Double the Sunshine!

Everyone has heard that expression, “two heads are better than one,” but what does it really mean? Is it the confirmation that we need to prove that our judgement is sound? Is it that there is power in numbers? Or is it simply that sometimes, it is comforting to know that there is someone else out there that thinks the way you do? How do you feel about the power of two?
